Texas Twinkies are treats wrapped in bacon and stuffed with cheese and brisket.
2 lbs., Bacon
4 ea, Anaheim Peppers (roasted and peeled)
2 lbs., Smoked Brisket (substitute for any similar product)
2 lbs., Whole Milk or Part Skim Bacio Block Cheese (medium dice)
Roast, peel, and seed Anaheim peppers and let cool down in refrigerator.
Dice Whole Milk or Part Skim Bacio Block Cheese and mix in with shredded meat.
Take the peeled and seeded Anaheim peppers and fill with roughly 2 oz of cheese and meat mixture. Use your hand to firmly squeeze and close the filling inside the pepper.
Shingle 4-5 slices of bacon side by side then wrap the peppers perpendicular with the bacon.
Once peppers are wrapped in bacon, tightly wrap in plastic and cool down in the refrigerator.
Take bacon wrapped peppers out of the plastic wrapping and fry at 350F until bacon is crispy.
Serve with your favorite dipping sauces.
